GASTROBLOGGERS: WHY IS TOKAJ ASZÚ THE MOST PRECIOUS WINE IN THE WORLD?

2021. November 17.

How many kilograms of aszú grain do you need for a bottle of aszú wine and why does an aszú grain cost 20 times more?

The Tokaj aszú is "the wine of kings, the king of wines." The unique process of making aszú is one, if not the most expensive in the world, although it doesn't usually come back in the final price, because you can't find aszú among the 10 most expensive wines in the world.

How many aszú grains do I need for a bottle of wine?

In the case of 5 puttonyos aszú, the traditional recipe used aszú grains of the same weight for 136 liters of base wine. Of course, this did not result in 136 liters of aszú, as all the moisture remained even in the shriveled eyes.

According to the product specification introduced in 2013, a maximum of 2.2 liters of aszú wine can be made from 1 kilogram of aszú grain, which in practice corresponds to 2 liters, ie four half-liter bottles (of course, the cost of producing base wine, cellar operation, etc.). There are winemakers who produce far less wine with so many aszú grains to make the end result even more concentrated.

When the aszú is ready, according to the product description, it must be aged for a further minimum of 18 months in barrels and 6 months in bottles, ie the wine will take up space for another 2 years, the barrel in the cellar and the money.

Adding all this, it is clear that making aszú is indeed a very expensive pastime - one of the most expensive winemaking processes in the world.
